Vital’s love for cooking started at his family restaurant in Acapulco, México at the age of 11. He started culinary training in Veracruz Mexico combining studies with work.

After graduating from culinary school, Vital moved to Puerto Vallarta to work in hotel La Tranquila where he spent 4 years as a executive sous chef, mostly creating new plates every week for the lobby restaurant and attending to the private chef service.

On succession of these 4 years, Vital moved to San Diego to pursue a bachelor's of science degree in culinary management where he graduated in 2015. Vital also worked at Tidal restaurant at Paradise Point hotel and also at private chef services with Shawn Matijevich‚Äč & Quynh Nguyen, the schools culinary professors.

Vital has recently moved to Europe to continue his gastronomic adventure. Visiting new countries inspires him to create new and innovative menus.

Vital joined M/Y MIRAGE in 2017.
